I usually try to do some kind of mix with sambal, chilli flakes, cayenne/red pepper, garlic, ginger. I like my chicken to be a bit burnt on outside but tender on inside. So if you blanch your chicken briefly the night before, then fridge it, then make sure it comes to room temp before you bbq it...will help in the cooking quite a bit Quote Link to comment Share on other sites More sharing options...
millenium girl Posted August 8, 2019 Share Posted August 8, 2019 I don't eat chicken (I'm vegan) but a friend of mine makes a marinade with Mrs Dash type spices and olive oil.
